Pizza Equipment Ltd offer two types of pizza dough press. Both are electric pizza dough presses. The Cuppone pizza dough press which uses heat and the Sigma pizza dough press which is cold. The best way to stretch pizza dough is dependent on your style of pizza.

The Cuppone pizza press will press your dough into perfectly uniform pizza bases using heated plates which seal the dough and prevent further natural fermentation of the dough. This means you can prepare multiple bases in advance, but each base will have limited movement during baking so any “handmade” look will be lost.

The Sigma pizza spreader does just that. It uses a patented micro-rolling system beneath the plates which reproduce the manual dexterity of the pizza maker by imitating their delicate hand movements. The pizza dough is spread rather than “pressed”. As there is no heat involved the pizza base will still rise and move during baking so a rustic finish will remain.
