GI Metal turning peels or small peels are agile and precise to handle; they are used to turn the pizza inside the oven, check its cooking by raising the bottom, and take it out the oven when cooked.
The small peel is robust and light, it is available with a solid head or with perforations. It is made from stainless steel to avoid heat transmission from the oven. The handle has an intermediate sliding grip made of a special high-density polymer that gives resistance to shock and heat.
The small peels have several categories. Again, the most popular is the Azzurra version. Also popular is the Napoli version which is more robust and better suited to the high temperatures associated with wood fired ovens.
