Turning peels or small peels are used to rotate pizzas in the oven whilst they are baking and also to remove them once baked. GI Metal's range of Napoletana turning peels have a reinforced head to cope with the high temperatures of a Neapolitan oven. They are manufactured entirely from stainless steel which avoids heat transfer from the oven. They also feature special perforations on the head to reduce friction, weight, and excess flour. The bottom of the handle and the intermediate sliding handle are made from high density polymer which is resistant to heat and impacts.
