The Pastaline dough divider and rounder system is fully automated and hugely labour saving. Hundreds of dough balls an hour can be produced with ease and minimal skill.
The P40 dough divider has a 40 litre tank which can hold around 30KG of dough. There is a spiral at the bottom of the machine which pushes the dough through an extrusion cone. A knife will then cut the dough either after a set amount of time has passed, or once the dough touches a feeler pin.
Once cut, the dough drops into a rounder. The dough piece is then rolled up through the spiral rounding system and emerges onto a platform in a neatly rolled ball where it is ready to be placed in to your dough trays for storage. The Pastaline dough divider and rounder system is designed to be used as separate components or as one combined machine.
The extrusion cone is interchangeable as each will have a different sized opening designed to facilitate a specific range of dough weights, these can be from 20 - 800 grams. There is also a stand and shelving system available for those purchasing the dough divider and dough rounder together.
Please note that the standard P40 dough divider is designed for use with dough that has up to 55% hydration, the standard KALI dough rounder is designed for dough up to 58% hydration. If your dough hydration is above these levels, or your dough is "sticky", you will likely need the P40 T and or the KALI B. These are "teflon" or non stick versions of the machines.
