Sigma manufacture both an automatic and semi-automatic bun divider rounding system which perfectly and softly reproduces hand movements. With the semi-automatic version, the lowering of the head, pressing, and cutting is facilitated through a side lever which is pulled down. The automatic version’s cutting and pressing is enabled by a hydraulic ram which automatically rounds in a single cycle.
The bench top version is a synthesis of the oldest methods of cutting and rounding bread and pizza dough. There are two variations available, 150g-320g divisions, and 300g-650g divisions. The rounding system is similar to the manual dexterity of the pizza maker meaning that the dough is not stresses and is always perfectly round. The machine is easy to use and allows unskilled staff to achieve excellent results with minimal effort.
